Every once in awhile a new recipe is tried and the family often responds with "mom..it's a keeper" meaning add this one to the family recipe book. So here I've compiled them all in one spot so they're easy to get to and add to. Hope you enjoy them as much as we have, and maybe they'll be keepers for you as well.

Fish Tacos with Chipotle cream sauce




John was craving fish tacos tonight so we went to costco and picked up a package of Tilapia and this is what we came up with. They were soooo good. Way better than Chili's fish tacos dad said and those were his favorite until now.

Crunchy Fish:
1 # Tilapia
(we used the Costco's breaded tilapia in the fish section using half & freezed the other half)

*To make your own crunchy topping:
1 large egg, beaten
1 c. panko bread crumbs (we love panko it makes such a good crunchy crust, you could use bread crumbs or whatever you like as well.)
1 1/2 T. Taco seasoning (recipe on this blog)

Preheat skillet on Med. Mix the panko bread crumbs with the taco seasoning in a container. In separate container beat egg well. Dip tilapia in egg then panko mixture to coat well. *if using Costco's pre-breaded fish sprinkle both sides of the fish with the taco seasoning. Then place on skillet. Cook fish on both sides until browned and fish flakes easily. Set aside to rest.


Chipotle Cream sauce:
1 c. sour cream
1 can chipotle chili in adobo sauce
1 can diced tomatoes with green chilis
1 t. taco seasoning (recipe here on blog)
1/2 lime juiced

Mix all above ingredients in a bowl. set aside.

Cook corn tortillas in a lightly oiled skillet warming on both sides. Place two corn tortillas on plate, top with fish, chipotle cream sauce, cheese, avocados, shredded cabbage, cilantro, and tomatoes. Then serve.
