Where can I find soy, almond, rice or coconut milk powder? I am very interested in this recipe b/c my husband is vegan and it would be nice to be able to make pudding for him, not to mention trifle and cakes which call for instant pudding mixes.
If you go to this blog post http://www.momitsakeeper.blogspot.com/2011/02/sources-for-vegan-milk-powders.html I have a list of places you can get non dairy powdered milks. Hopefully this helps, and thanks for the comment!
The title says "instant," but the preparation instructions say to cook it. Would it also work without cooking?
you do need to cook this. however, i was looking for a recipe that was vegan and easy to keep on hand in the cupboard.
Hi .. Just making sure... is it 1 1/4 c. soy -OR- almond -OR- rice -OR- coconut milk powder...
Yes, it's whatever you like as a milk substitute. our family does not do soy or almond so we use the coconut milk powder, or if i am making fresh, not to store I will use fresh coconut milk.
