Every once in awhile a new recipe is tried and the family often responds with "mom..it's a keeper" meaning add this one to the family recipe book. So here I've compiled them all in one spot so they're easy to get to and add to. Hope you enjoy them as much as we have, and maybe they'll be keepers for you as well.

sushi hand rolls

Makes approximately 12 sushi handrolls 12 half sheet Nori seaweed 1 16 oz. block super firm tofu, high protein 1/2 c. vegan mayo 1 1/2 T.rice vinegar 2 T. coconut amino 3 +T.siracha 2 green onions sliced 2 T. shredded carrots, optional kelp powder Sushi Rice avocado, thinly sliced cucumber, thinly sliced radish,thinly sliced sprouts carrots, thinly wasabi sesame seeds soy sauce pickled ginger Use a cheese grater and grate the tofu. mix the grated tofu with mayo, vinegar, coconut amino, siracha, green onions and carrots. add more siracha if need more spice, sprinkle with kelp. taste and adjust seasonings Can use this mix right away or let sit overnight to meld flavors place rice on nori seaweed, top with tofu/crab mix, top with avocado, cucumber, radish, sprouts, carrots or any other toppings you like. sprinkle with sesame seeds and roll up into handroll serve with wasabi, pickled ginger and soy sauce.
